Apple Pie
Beth Baird’s Recipe for Apple Pie (not gluten-free) from SCRATCHES ON APPLE PIE (her first book) and a few of her pie “Truisms”
If you bake someone a pie he/she knows you care.
Baking a pie makes your house smell like a home.
If you always have a fresh pie to offer friend you may have more friends.
If you bake someone a pie you may get a surprise.
If you eat pie for breakfast you will have a better day.
A single piece of pie is miserable. [I think this means you should eat it to put it out of its misery.]
Pie can help you meet people.
Pastry
Mix together: 2 cups flour and 1 teaspoon salt
Cut in: 2/3 cup shortening
Sprinkle with: ¼ cup cold water
Gather dough together and press into two balls. Roll one out and line a 9” pie pan.
Add filling.
Filling
Mix together: ½ to 1 cup sugar
1 teaspoon cinnamon
1 teaspoon nutmeg
1 tablespoon cornstarch
Mix through: 6 to 7 cups apples [peeled, cored, & sliced]
Heap into your pastry lined pan.
Dot with 2 tablespoons butter.
Cover with top crust.
Crimp edges.
Dab with milk.
Bake at 400° for 50 to 60 minutes.
